Yellow Bloodwood - this beautiful native have large, white to cream blossoms, and are one of our favourite blooms. This honey is a light, floral, everyday variety with a wonderful depth of flavour. We can see it becoming a fast favourite!
Autumn Flora - This amber hued variety is drawn from a mix of floral sources around Mulgoa. It's quite light in consistency, but has a depth of flavour edging on a 'not too sweet' honey.
Red Stringy Bark - How to even begin when it comes to Red Stringybark (Eucalyptus macrorhyncha)?! This one really is a treasure! Red Stringybark trees only flower every four to eight years.
This specific honey has been collected from hives placed around Red Stringbark woodlands in the Central Tablelands, or Central West. Think Upper Lachlan Valley near Woodstock/Lyndhurst, if you're familiar with that area.
And taste wise? Well! It has a truly rich, deep, whole toffee/caramel-like flavours, with earthy/nutty undertones. It's very distinct! Its texture is thick, and colour - a bronzed amber. It smells like caramelised sugar with a hit of eucalyptus.
